Chocolate pudding that’s delicious AND good for you…what??? Here it is my favorite guilt free chocolate pudding recipe that brings out the glutton in me.
It’s hard to believe that it is delicious and good for you. Packed with healthy fats, B vitamins, vitamin E, potassium, folic acid, protein and anti-oxidants to name a few. This was my goto during pregnancy when I wanted something yummy and sweet.
I’ve been whipping this up for myself for several years now, and any time I post a picture of it on my Instagram I ALWAYs get a few people that ask for the recipe. The last time someone asked, I gladly shared. And then she suggested I put my recipes up on my website so it would be easier for people to find…
Why didn’t I think of that?
So here is the first recipe I am posting with many more to come.
THE GUILT FREE INGREDIENTS
- 2 Very Ripe Bananas (Frozen or Not doesn’t matter)
- 2 Avocados
- 1 Cup Peanut Butter
- 1 Cup Cocoa Powder
- 2/3 Cup Maple Syrup
- 1/2 Cup Almond Milk or other non-dairy milk
Optional Ingredients
- Orange– I put half an orange in my recipe with out altering the almond milk amount to keep the thickness. Also add a little bit of the orange peel for added orange flavor.
- Mint Leaves– I haven’t tried this yet but I love Mint Chocolate anything so next time for sure!
Optional Toppings
- Cacao Nibs
- Orange Zest
- Chia Seeds
- Hemp Seeds
- Coconut Shreds
THE SIMPLE PROCESS
Super simple. I use my Vitamix, but have also used a food processor. Either one works, although if you have a smaller food processor then think about maybe cutting the recipe in half.
Just add all the ingredients in and blend until smooth.
After mixing store in airtight container and chill in the fridge. ( I don’t ever do this really. I immediately start eating it.)
Last time I got really creative. I made popsicles with the pudding mix, and stored the rest for pudding. The popsicles turned out great!
